A few years ago, several people in my neighborhood decided it would be fun to have a candy making class. Each week one of us would teach the rest of us how to make a different kind of candy. Bonnie Call decided that these cookies were close enough to candy (after all, they have Rollos in them). They are really good and the caramel in the middle is a pleasant surprise to the unexpecting.
Rollo Cookies
2 ½ cups flour 1 T sugar
2 eggs 4 oz white chocolate
¾ cups cocoa
1 cup chopped pecans 48 Rollo candies
1 t. soda
½ cup sugar
1 cup brown sugar
1 cup butter (no substitutes)
2 t. vanilla
Mix butter, sugars, eggs and vanilla. Mix in flour, cocoa, soda and ½ cup pecans. Roll 1 tablespoon of dough around a Rollo. Dip in sugar and remaining nuts. Bake at 375ยบ for 7 -10 minutes or until cookie is cracked. Let sit on cookie sheet for 2 minutes. Drizzle with melted chocolate.
